Easy Chicken Casserole! What’s the secret ingredient?

Great with left over Christmas turkey too!

 

It’s almost impossible to eat a healthy, balanced diet without some planning and a fair amount of home cooking. Nonetheless, you don’t have to cook complicated dishes and if you are organised you can reduce the time you need to spend in the kitchen.

This chicken casserole is a simple, healthy dish (approx 425 calories per serving). The ingredients are for a 4-6 servings and suitable for freezing.  Therefore, worth making up a batch and freezing, perfect when you get in from a long night of dancing :)

It takes 15 min to prep and 45min/1 hour in the oven.

 

Ingredients

3 peppers, diced

1 courgette, diced

1/2 onion, diced

1 x 400g can chopped tomatoes (where possible organic)

4 chicken breasts, diced (where possible organic or free range)

1 cube chicken stock (I recommend knorr chicken stock pot)

Secret ingredient – 1 x 100g can of Heinz Tomato Soup!

Fresh coriander (chopped, sprinkle on top to serve)

 

Method

1) Pre-heat oven to 190° C/ gas mark 5.

2) Place all the ingredients into an ovenproof dish, mix well.

3) Cover with tin foil and cook for around 45 minutes -1 hour.

4) Delicious served with fresh bread, brown rice or mash.

Casseroles are great because they are generally very versatile. Add/swap any vegetables if you have other vegetables to use up. You just need to ensure they are diced so cook through in time.

This dish would be perfect to make with left over turkey from your Christmas lunch. If the meat is already cooked, just add it to the casserole for the last 20 min of cooking time.

You burn 100’s of calories an hour whilst dancing! Don’t be tempted to put all those calories back on in a few unhealthy snacks, high in sugar, fat and calories. Try to have healthy snacks and meals to hand, especially when you know you will be busy or have a long night ahead.
